Rose coconut karanji – a crispy pastry filled with sweet and delicate rose flavored coconut filling that melts divinely in your mouth. Yes, it is Diwali this week and if I can share one traditional recipe with you, hands down it would be this rose coconut karanji. I am not a big fan of the traditional karanji but I am hooked on to this delectable recipe which has aromatic and sweet, rose flavored filling. Happy Diwali everyone!

Home cooking at its best! A beautiful year around recipe that is nutritious and flavorful with very few ingredients. We try to eat Salmon once a week in my family. In addition to Tandoori Salmon and Methi garlic salmon, here is another quick recipe of Salmon Tikka Masala Skewers that we savor.  This recipe uses green marinade made with the goodness of cilantro, mint, ginger, garlic, yogurt and the warmth of homemade garam masala which is especially good for fall and winter meals.

I love fall season, the crisp air, cooler nights, the new harvest of pumpkins and apples, leaves changing color and the pretty mums! My mom has been with me many fall seasons and we always go pumpkin and apple picking. She thoroughly enjoys the hay rides, the apple cider, picking giant pumpkins and varieties of apples. She has an unbelievable amount of energy that she passes to people around her. Here is a picture from October 2013 when she last visited me.
