Carrot Halwa – Instant Pot

Carrot Halwa, AKA ‘gajar ka halwa’, is a sweet stewed carrots dessert with a delicate aroma of cardamom and saffron!

This year we celebrated mothers day with this delicious Indian dessert cooked in the Instant Pot! The traditional carrot halwa recipes uses milk, condensed milk or evaporated milk. Since this is one of my favorite desserts and I can’t stop myself from overeating, I try to make it a little healthier. My carrot halwa recipe is almost dairy free, but I do use homemade ghee which can be substituted for vegetable oil. Chana Saag – Instant Pot {Chickpeas and Spinach Curry}

Chana Saag – A vegetarian, chickpeas and spinach dish cooked in onion, tomato based tangy sauce and spiced with turmeric, cumin and garam masala.

In addition to the restaurant-like Chana Masala, this chana saag dish is a staple for weeknight meals and also a good make-ahead dish for pot lucks and dinner parties. Roasted beets with cashew garlic sauce – A healthy appetizer inspired by Oceanos, a Mediterranean restaurant in NJ. We visited Oceanos this past December to celebrate a special birthday, the food was delicious and the ambience delightful!

One of my favorite dishes was the roasted beets served with a smooth, velvety and delectable cashew garlic sauce. Bhogichi Bhaji (Traditional maharashtrian mix vegetable curry)

Bhogichi Bhaji – A traditional Mahrashtrian curry that celebrates the seasonal bounty of winter vegetables along with healthy and aromatic sauce made from coconut, peanuts and sesame seeds.

I love to celebrate holidays! I love to think and reflect back on memories of my childhood when my mom’s energy and enthusiasm filled our home with excitement and happiness! She would make some special dishes, desserts and we always had family and friends to share and enjoy with. Now, I love to take time for my family for every festival and make sure we do something special. We talk about the festival and why it is celebrated. And of course, it always includes the traditional dishes and sweets we savor together as a family.

Today, we celebrate the first of the three day celebration of Makar Sankrant. In India, Makar Sankrant symbolizes the end of the winter solstice and the monsoon, and the beginning of the harvest season. Some states celebrate this festival for up to four days. In Maharashtra, where I come from, this festival is celebrated for three days. On the first day which is ‘Bhogi’,  we make this special dish that celebrates the seasonal bounty of winter vegetables along with coconut, peanuts and sesame seeds. It provides the much needed warmth and nourishment to the body during winters.

Bhogichi bhaji

This super healthy dish consisting of five different winter vegetables is passed  from generation to generation and is an integral part of this festive celebration. Today I am sharing my grandma’s recipe that uses carrots, fresh green chickpeas, flat green beans, baby eggplant and tomatoes. You can always substitute with any seasonal winter vegetables. I like it with multi-grain or millet bread topped with sesame seeds.

Swiss chard wadi {Layered Swiss Chard spirals}

Swiss Chard wadi or Layered Swiss Chard Spirals are spicy, sweet and tangy rolls, pan fried to perfect crispiness and sprinkled with sesame seeds! These rolls are packed with fiber, protein and folic acid making them a healthy and gluten free side dish that is sure to impress your family and friends. These rolls can be made ahead of time and simply pan fried when ready to be served. The steamed rolls also freeze very well. Traditionally made with colocasia leaves, alu wadi is a Maharashtrian delicacy that I grew up eating frequently. Pomegranate juice

Pomegranates – The jewel of autumn. We are in peak autumn and the plump pomegranates are in season!  They are in every grocery store and so are many videos on how to seed a pomegranate. I love pomegranates for their taste, nutrition and of course the gorgeous red color. They are make beautiful garnish on pretty much any dish. My favorite way to enjoy them is by making fresh pomegranate juice!
