Easy Undhiyu {Mixed Vegetable Casserole} – Instant Pot

Easy Undhiyu, may sound like an oxymoron, but once you read the recipe and I pretty sure you will agree with me and might even award this to be the easiest version!

Traditionally made in a clay pot, Undhiyu is a special gujarati dish made with medley of tubers and veggies likes, purple yam, sweet and regular potatoes, green beans, eggplants, etc. The clay pot is filled with veggies and spices and are then buried in a large underground furnace that is covered with a pile of dried leaves that are set alight.

French Onion Soup is by far the most requested soup for dinner parties with our friends and family. My vegetarian take on this rich and indulgent dish boasts flavors of caramelized onions, toasty buttered croutons, sweet thyme and of course, melted gooey cheese.

Puran Poli – Sweet Lentil Flatbreads

Happy Holi! Today we celebrate Holi, the festival of color; the celebration of victory of good over evil with a traditional meal of delicious Puran Poli – sweet lentil stuffed flatbreads.

Holi, is a popular Hindu festival celebrated over 2-5 days in India. On the evening of the first day, public bonfires are made, called Holika Dahan. On the next day (or 5th day in some states) people play with colors. My memories of Holi are of the bonfires and all of my loved ones gathering around them to pray. The fifth day is the most colorful day where we shower our friends, family and even those we don’t know with vibrant color both powder and liquid. Even after the holiday passes the streets of India look like a Monet covered in a sea of color.

Mixed vegetable curry with sesame sauce – Instant Pot

Bhogichi Bhaji – A traditional Maharashtrian mixed vegetable curry with a spicy sesame sauce that celebrates the seasonal bounty of winter vegetables cooked in an earthy, aromatic sauce with coconut, peanuts and sesame seeds.

During my last Indian grocery store visit, a couple of weeks ago I found the traditional winter veggies for this recipe  already available. So I decided to give them a try in the Instant Pot and bought the baby eggplants, fresh green chickpeas in pod, the Indian green beans (vaal).  The only vegetable I was worried about over cooking was the baby eggplant. So I cut them a little bigger to adjust the cook time for the remaining ingredients and I was happy to see the veggies cooked so perfectly in the Instant Pot.
