Citrusy lentil soup - Instant pot

Citrusy lentil soup cooked in Instant Pot, is a lightly spiced, delicious and tangy soup made with simple ingredients such as lentils, tomatoes, oranges and few basic spices.

Ingredients

  • 1 cup dried split yellow pigeon peas rinsed and drained
  • 3 plum tomatoes diced
  • 2 teaspoons kosher salt
  • ½ teaspoon ground turmeric
  • ½ teaspoon red chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons ground corinader
  • 3 navel oranges, juiced about 1 ½ cups juice
  • 1 tablespoon brown sugar optional
  • 2 tablespoons fresh cilantro finely chopped

Instructions

  • Add lentils, tomatoes, salt, turmeric, red chili powder, cumin and coriander to the Instant pot. Add 3 cups of water. Stir and close Instant Pot.
  • Pressure Cook for 15 minutes. Let the pressure release naturally.
  • Open Instant Pot and blend the lentils with an immersion blender to make smooth puree.
  • Add orange juice and mix well. Add salt and pepper to taste. I also added brown sugar to give a little sweet taste to the soup and to compliment the tangy flavors from tomatoes and oranges.
  • Garnish with finely chopped cilantro leaves. Serve hot!
