Citrusy lentil soup - Instant pot
Citrusy lentil soup cooked in Instant Pot, is a lightly spiced, delicious and tangy soup made with simple ingredients such as lentils, tomatoes, oranges and few basic spices.
Add lentils, tomatoes, salt, turmeric, red chili powder, cumin and coriander to the Instant pot. Add 3 cups of water. Stir and close Instant Pot.
Pressure Cook for 15 minutes. Let the pressure release naturally.
Open Instant Pot and blend the lentils with an immersion blender to make smooth puree.
Add orange juice and mix well. Add salt and pepper to taste. I also added brown sugar to give a little sweet taste to the soup and to compliment the tangy flavors from tomatoes and oranges.
Garnish with finely chopped cilantro leaves. Serve hot!
