A lightly spiced Citrusy lentil soup with sweet and tangy flavors. Easy Instant Pot recipe with pantry ingredients like lentils, tomatoes, oranges, and basic spices.

citrusy lentil soup in a white bowl

Schools are close this week due to the Blizzard of 2017. So I am grabbing the opportunity to experiment in the kitchen with my boys. It was my younger son's turn this time to cook something in the Instant Pot. He was so excited and this recipe was perfect for him to make!

The original recipe is from one of my favorite blogs, coniferesetfeuillus! Annika, the blogger, is a very talented woman with delicious recipes and gorgeous photography. Her posts are fun to read, and I love that she shares her experiences from growing up in an immigrant family from India.  Many of her stories resonate with my experiences as an immigrant.

This recipe calls for split pigeon peas that are a staple in Indian households. It would also work great with split red lentils {masoor daal}.  I love how the tomatoes and spices seamlessly blend in this soup!

    Tip

Adding a little bit of brown sugar complements the tangy flavors making it a yummy sweet and sour soup.

    Ingredients

    • 1 cup dried split yellow pigeon peas rinsed and drained
    • 3 plum tomatoes diced
    • 2 teaspoons kosher salt
    • ½ teaspoon ground turmeric
    • ½ teaspoon red chili powder
    • 2 teaspoons ground cumin
    • 2 teaspoons ground corinader
    • 3 navel oranges, juiced about 1 ½ cups juice
    • 1 tablespoon brown sugar optional
    • 2 tablespoons fresh cilantro finely chopped

    Instructions

    • Add lentils, tomatoes, salt, turmeric, red chili powder, cumin and coriander to the Instant pot. Add 3 cups of water. Stir and close Instant Pot.
    • Pressure Cook for 15 minutes. Let the pressure release naturally.
    • Open Instant Pot and blend the lentils with an immersion blender to make smooth puree.
    • Add orange juice and mix well. Add salt and pepper to taste. I also added brown sugar to give a little sweet taste to the soup and to compliment the tangy flavors from tomatoes and oranges.
    • Garnish with finely chopped cilantro leaves. Serve hot!

Please forward my praise to your 11 year old, he made a very nice presentation..
The soup looks fantastic and sounds just as good as it looks.. I don't have an Instant Pot or my pressure cooker with me.. It takes up too much room in the truck for the little I use it.. But I could do this on the stove while I'm pittling around in the truck for extended times parked ?

Thank you Pan for your kind words. I will pass them to my son. I am sure this recipe will come out good in the stove too. Needs very few ingredients for a super tasty soup.

Made this today and loved it! Perfect for this weather. However I used OJ instead of fresh juice as that is what i had and I also added a little ginger when cooking..definitely a keeper..4 stars
