Homemade paneer with just two ingredients, milk and lemon juice or vinegar. Fresh, creamy, and free of preservatives, ready with th just 15 minutes of active cooking time. Makes 12 oz (350 grams) of paneer
Rinse a large, heavy-bottomed pot with water, leaving a bit of water coating the bottom; this keeps the milk from scorching. Add the milk and bring it to a full, rolling boil over medium heat, stirring frequently.
Once the milk is at a full boil, add the lemon juice 1 tablespoon at a time, stirring gently, until the milk curdles into white curds and clear, greenish whey, usually around 4 tablespoons total. Turn the heat off as soon as it curdles.
If using vinegar, mix vinegar with an equal amount of water and then stir it into the milk.
Place a large strainer over a bowl. Line the strainer with a double layer of cheesecloth, large enough to gather and bundle. Pour in the curdled milk, then run cold water over it for a minute or two to rinse off the lemon or vinegar taste.
Gather the corners of the cheesecloth and squeeze out as much liquid as you can. While still wrapped, shape the bundle into an even, round disc, about 7 inches wide.
Place the wrapped disc between two cutting boards. Weigh it down with a heavy pot or a small mortar and pestle, and let it press for 1 hour; this firms up the texture and drains the remaining moisture.
Make sure you do not put too much weight on it, as it will dry out the paneer, making it very crumbly.
Unwrap the paneer and cut into cubes. Refrigerate for up to a week, or freeze for 2-3 months.
Notes
For a creamier paneer, add ¼ cup of heavy cream to the milk before bringing it to a boil.
