Thecha Paneer are soft paneer cubes coated in fiery green chili garlic chutney, seared in a hot pan until the edges turn golden and the thecha crisps up. The outside is spicy, nutty, and slightly crunchy, while the inside stays creamy and mild, so every bite is balanced. It takes about 10 minutes of cooking, making it one of my go-to quick meals or an appetizer when friends drop by.

If you have a jar of my mom's thecha in the fridge, you are already most of the way there. I grind it a little finer for this recipe and add fresh lemon juice, and that small change turns the rustic chutney into a coating that clings nicely to the paneer.
Thecha paneer is paneer coated in thecha, the Maharashtrian green chili, garlic, and peanut chutney, and pan-seared until lightly golden. It is simple to make with just three ingredients, one pan, and no marinating time. It's my go-to meal whenever I want something vegetarian with big flavor. For a quick lunch, I like to serve it alongside my ABC salad, and it also makes a perfect appetizer when I'm hosting.
Ingredient Notes

- Thecha: I have shared my quick and easy thecha recipe. Traditional thecha is coarse, but for this recipe, I pulse it in the food processor to make it finer and more even. It makes the thecha easy to spread in a thin, even layer and stays on the paneer when you flip it.
- Paneer: Cut paneer into 1-inch squares about ½ inch thick. This shape gives you two large flat sides that brown well and hold plenty of thecha. Homemade paneer is already soft and can be used as is. If you are using store-bought paneer, like Gopi, soak the cubes in hot water for 10 minutes. This little trick helps paneer turn super soft. Drain them and pat them dry with a paper towel before coating with thecha.
- Fresh lemon juice: Add a squeeze of fresh lemon juice into the ground thecha. It brightens the garlic and chili and helps loosen the mixture so it spreads easily.
How to Make Thecha Paneer





Serve thecha paneer on toothpicks as a party appetizer, or as a side with dal and rice. It also works as a filling for wraps with laccha pyaaz and a little yogurt, or tucked into a warm Roti or Paratha.
Making Ahead and Storing
You can make the thecha up to several days ahead and keep it in the fridge. The paneer can be cut in advance and refrigerated.
Leftover thecha paneer keeps in an airtight container in the refrigerator for up to 2 days. Reheat it in a nonstick pan over medium heat for a minute or two per side so the outside crisps up again.

Ingredients
- ¼ to ½ cup thecha
- 6 oz paneer cut into 1-inch squares about ½-inch thick
- ½ teaspoon kosher salt
- 2 cups hot water for soaking store-bought paneer
- 2 teaspoons fresh lemon juice
- 1 tablespoon oil
- 1 tablespoon cilantro finely chopped for garnish
Instructions
- Pulse the thecha in a food processor until it is finer and more even in texture. Transfer to a bowl and stir in the lemon juice.
- If using store-bought paneer, sprinkle with salt and soak the cut pieces in hot water for 10 minutes to soften. Drain and pat dry.
- Put a little thecha on top of each piece and press it on lightly with your fingertips so it sticks. Do the same on the other sides until the whole piece has a thin coating. The narrow edges won't hold as much, and that's fine.
- Heat the oil in a nonstick pan over medium heat. Arrange the paneer in a single layer.
- Cook for 2 to 3 minutes per side, until both sides are lightly golden brown.
