The first sip of a cold Sweet Lassi on a hot afternoon is one of those simple pleasures that never gets old. My mother would pull thick, set yogurt from the refrigerator, drop in a few ice cubes, and blend everything while we hovered nearby, waiting for our glasses. There was no recipe, no measuring. Just andaza, her intuition, and the knowledge that the right ratio of tang to sweetness makes all the difference.
This recipe is my version of that Punjabi meethi lassi. It uses whole milk yogurt for body and richness, a splash of cream or whole milk (whichever I have on hand) to smooth out the tartness, ground cardamom for warmth, and just enough sugar to balance. If you love the restaurant-style mango lassi, or my favorite for entertaining, rose cardamom lassi, you will love this version just as much. It blends in under two minutes and tastes better than anything you'd find in a bottle.

The Secret Is in the Ratio
Most lassi recipes use water to thin the yogurt, which dilutes the flavor. Using whole milk or heavy cream instead keeps every sip rich and full without feeling heavy. The ice blends directly into the drink rather than sitting on top, giving you a lightly frothy, perfectly cold glass every time. The cardamom lifts the sweetness and adds a lightly floral, slightly spiced note that makes lassi taste like lassi and not just a sweetened yogurt drink. Kosher salt sharpens every other flavor and keeps the sweetness from going flat.
Ingredient Notes

- Whole milk yogurt: Use the best quality, full-fat yogurt you can find. I love Desi Dahi as well as Yoga, as they have that perfect tang. If you use Greek yogurt, add a splash more milk to loosen the texture.
- Whole milk or heavy cream: Whole milk gives you a lighter, more traditional texture. Heavy cream gives you something richer and more indulgent. Use whichever one you have on hand.
- Ice: Four large cubes blend down into the yogurt base and chill the drink thoroughly without watering it down the way extra liquid would.
- Sugar: Four tablespoons is a medium-sweet starting point. Taste before you pour and adjust to your taste. If your yogurt is especially tart, you may want a little more.
- Kosher salt: Half a teaspoon may sound like a lot, but it dissolves into the drink and only makes the sweetness more vivid. Also, I use kosher salt, which is less salty, but if you are using regular salt, then reduce it by half.
- Ground cardamom: Fresh-ground is noticeably better if you have green cardamom pods and a spice grinder. Remove the outer green covering and then grind the seeds into a fine powder. Store-bought cardamom powder also works well in a pinch and keeps things simple.

Tips
Make-ahead: Blend everything except the ice and refrigerate for up to 24 hours. Add ice and re-blend just before serving.
For a thicker texture: Use strained yogurt or labneh. The result is almost a drinkable frozen-yogurt consistency.

- 2 cups whole milk yogurt
- ½ cup whole milk or heavy cream
- 4 large ice cubes
- 4 tablespoons sugar
- ½ teaspoon kosher salt
- ½ teaspoon ground cardamom
- Dried rose petals for garnish
Instructions
- Combine the yogurt, milk or cream, ice, sugar, salt, and cardamom in a blender.
- Blend on high speed for 30 to 45 seconds until completely smooth and frothy. Taste for sweetness and adjust if needed.
- Pour into three tall glasses and garnish with dried rose petals. Serve immediately.
