My Rose Cardamom Lassi is pure bliss in a glass! Delicate rose, warm cardamom, and tangy yogurt come together like a little celebration; fragrant and floral, lightly spiced and just sweet enough. It's sweet-meets-tangy with a dreamy floral note I love. A handful of ingredients, one quick blend, and you've got the prettiest chilled Indian drink ever.

This Rose-Cardamom Lassi feels cool, fresh, and cozy all at once. A pinch of salt is essential to balance the sweetness and really bring out the flavors of each component. It's hard to believe something so wonderful can be this simple!
If you enjoy this lassi, you'll also love other classic Indian beverages that are often served in homes during the summer. From the tangy Aam Panna and refreshing Ginger Lemonade to cooling Mango Lassi and the indulgent Mango Mastani, these are the drinks I grew up sipping on hot afternoons. Each one brings back memories of family gatherings, long summer vacations, and the comforting tradition of homemade refreshments that kept us cool and happy.

Lassi isn't just a great match for spicy Indian meals, but also enjoyable on its own. You can make it sweet with fruit and sugar, or go savory with a pinch of salt and spices. While Mango Lassi is the most popular in the US, you can try other delicious versions like Cardamom Lassi or even add fresh mint for a twist!

Ingredient Tips and Substitutions
- Yogurt - I highly recommend using plain full-fat yogurt to make the creamiest lassi. You may substitute low-fat yogurt for a lighter version. While testing, I found that adding ice cubes instead of water helps the lassi instantly chill without making it watery! Of course, you can add more or fewer ice cubes to make the lassi texture thick or thin.
- To make Vegan lassi, use coconut yogurt or cashew yogurt and a squeeze of lemon to replace the tang from whole milk yogurt. Fage lactose-free yogurt is another good option if you can have dairy but are sensitive to lactose.
- Guru Brand Rose Syrup is the best one I have found. You can also use Rooh Afza. Rose syrup can be substituted with rose water or rose essence. The lassi color will be white, but still flavorful. You will have to add sugar to taste.
- Ground cardamom makes the lassi smooth and adds a delightful floral aroma to the lassi. You can also add green cardamom pods instead, just make sure to use a high-speed blender that will blend them smoothly.
- Don't forget salt! It complements the sweetness of lassi.
