    • Butter the bread before adding the chutney for added taste
    • The chutney has salt in it, but if you need more sprinkle some salt & pepper as per taste
    • Sprinkle some Indian Chaat masala or Sandwich masala for an extra kick
    • Kids love cheese, so feel free to add a slice to get those proteins in
    • Skip the butter and cheese altogether for a tasty vegan option

    Pro Tips To Make The Best Bombay Sandwiches!

    • Preferably use white bread for this recipe. Feel free to use any soft bread for this recipe, but white bread is the most preferred
    • Thinly slice the veggies so they can be neatly layered
    • Use only ripe but firm tomatoes
    • Sprinkle a tiny amount of salt and chaat masala for enhanced flavors
    • If the sides of the bread are stiff or if you prefer not to have them, feel free to cut and discard them
    • How to pack for a picnic - To avoid getting the sandwiches too soggy, pack sliced cucumbers and tomatoes separately and layer them on when you are ready to eat

    Chutney Sandwich Variations

    The beauty of this sandwich recipe is that, with a slight change in the ingredients, it can be adapted to many delish and fun versions. 

    • Hi-tea cucumber sandwiches - place thinly sliced crisp cucumbers between slices of bread laced with fresh green chutney 
    • Grilled vegetable sandwiches - follow the Bombay Sandwich recipe and simply grill it to a toasty brown
    • Tri-color sandwiches - layer one slice of bread with the green mint-cilantro chutney. Layer the other side with ketchup. Place a slice of American cheese and voila! You have a kid's favorite sandwich that makes for an awesome school lunch

    How To Assemble The Chutney Sandwich

    1. Apply up to 1 tablespoon of chutney (more or less depending on the spice level on one side of the bread. 
    2. Take one slice and start layering veggies over the chutney side. Start with steamed veggies that do not release too much water like potatoes/beets as it will help the bread from getting soggy. Then layer over cucumbers and tomatoes.
    3. Layer onions/bell peppers making sure you have a nice flat layer of veggies. Sprinkle with chat masala or salt & pepper (optional).
    4. Finally, place the second slice of bread chutney side down over the veggies. Cut the sandwich in half lengthwise or diagonally and serve immediately.

    Ingredients

    • 4 sliced white bread or your favorite soft sliced bread
    • ¼ cup green chutney
    • 1 small cucumber persian
    • 1 tomato ripe but firm, thinly sliced
    • 1 small potato steamed

    Optional veggies

    • small onion halves & thinly sliced
    • Small Red or green peppers halved and thinly sliced
    • avocado thinly sliced
    • small beet steamed & thinly sliced

    Optional ingredients:

    • Butter or neutral oil
    • Ketchup
    • Cheese
    • Chat masala
    • Salt & pepper

    Instructions

      Love a good sandwich for work lunch. So far have made 3 of your recipes and just loving all that you do. The meal plans, how to's, grocery list..I mean THANK YOU!       This was fantastic! I made it on lavash bread with a thin spread of cream cheese and a sprinkle of curry powder and salt and grilled the whole thing- cest magnifique!
