Egg Bhurji {Indian scrambled eggs}

Indian scrambled eggs or egg bhurji is a spicy, mouth watering spin on the scrambled eggs. Healthy and nutritious eggs, cooked in caramelized onions, scallions, hot chili peppers, tomatoes, ginger, garlic and a variation of spices and garnished with cilantro or scallions or both!

In many Indian cities, road-side stalls serving hot egg bhurji with soft buns drenched in butter is a common site. It is a very popular street food, that I never had a chance to try. Lucky me, has a gourmet cook mother who made a much healthier version at home that tastes heavenly.

We would have a yummy breakfast of piping hot egg bhurji that smelled amazing with the fresh ginger, garlic and homemade garam masala. She would serve it with warm homemade  layered parathas that were cooked to perfection with homemade ghee on top!

Everyone in my family loves it so much that we are ready to start a new tradition of having this meal for our christmas day brunch every year. The cool weather and the holiday festive mood calls for something simple yet so flavorful and heart warming. Served with a hot cup of lemon ginger tea, this makes a hearty and healthy brunch.

The egg bhurji requires few basic ingredients. You can always add more vegetables like mushrooms, bell peppers or spinach.

Heat oil in a heavy bottomed pan.  Add chopped onions along with some salt. Sauté the onions on medium heat until they are translucent and golden brown.

Add ginger, garlic, jalapeño and half of the scallions to the onions. Cook for another 2 minutes, stirring everything together.

Add chopped tomatoes and turmeric to the pan and cook for 2 mins. Whisk the eggs with some milk and salt.

Slowly pour the whisked eggs to the pan and keep mixing with a spatula for 5-6 minutes until the eggs are almost cooked. Add the garam masala and garnish with chopped cilantro and remaining scallions. Mix well.

egg-bhurji-1I love to serve the egg bhurji with warm toasted bread.  Instead of using a toaster try this stove top method.  Apply ghee on both sides of sliced bread and then cooking the bread crisp-golden-brown on a griddle. The beautiful aroma of melted ghee makes this dish irresistibly appetizing.

Ingredients
  • 6 Eggs
  • 1/4 cup milk
  • 1 large onion
  • 1 to mato
  • 1 jalapeno pepper
  • 2 garlic cloves grated
  • 1/2 inch ginger grated
  • 3 scallions
  • 1/4 tsp turmeric
  • 1 tsp garam masala
  • 1 tbsp cooking oil
  • 1 tbsp ghee for the bread
  • cilantro for garnish
  • salt to taste
Instructions
  1. Chop onions, tomato and jalapeño into small pieces. Chop scallions and cilantro.

  5. Slowly pour the whisked eggs to the pan and keep mixing with a spatula for 5-6 minutes until the eggs are almost cooked. Add the garam masala and garnish with chopped cilantro and remaining scallions. Mix well. Keep on Low heat.
  6. Put a griddle pan on Medium heat. Apply homemade ghee on both sides of sliced bread. Cook the bread slices crisp-golden-brown on a griddle.
  7. Enjoy egg bhurji with the toasted bread!
